That Once-A-Year Breakfast Casserole

As I've shared before, I love hotch potch and mix-and-match type of dishes because you get EVERYTHING all in one and all at once. It's so convenient and efficient. This is why I have a profound appreciation for soups, salads, casseroles, and one-pot wonders. They're also customizable so you can make it work for you and be as creative as you wish. Very much like this breakfast casserole.

Make It Your Own


This is a dish with items you'd find in the kitchen and pantry and have on hand for a weekend savory breakfast.


Hash browns or biscuits are common carbs used as a base to support the hefty toppings. Eggs, sausage and cheese are the main ingredients, but you can certainly use alternative options to make this healthier, meatless, vegan or vegetarian. For instance, swap the pork sausage for turkey sausage, chicken sausage, tempeh bacon, beyond meat. Swap chicken eggs for plant-based liquid alternatives or flaxseed plus water. Swap the dairy cheese for dairy-free alternatives. Mushrooms and tofu can be used at meat substitutes.


Incorporate vegetables for a more nutritious and colorful casserole. Red, yellow and green bell peppers offer antioxidants and disease-fighting properties. Arugula, bok choy, kale, broccoli and cauliflower are some cruciferous options to include.



Preparation and Pre-Cooking


Fully cook your sausage and mostly cook hash browns before incorporating these foods in the casserole. They'll be coated with the egg and cheese mixture and bake some more.


I use an aluminum casserole pan, a mixing bowl and a mixing spoon or whisk.

My Breakfast Casserole Recipe


📌 Eggs (I use a dozen)

📌 Milk (about 1/4 cup)

📌 Hash brown patties or tater tots

📌 Cheese (about 1 cup of sharp cheddar and mozzarella)

📌 Cream cheese (one 8-oz pack)

📌 Sausage (smoked, Conecuh, breakfast)

📌 Cornflakes (about 1.5 cup)

📌 1 stick of melted unsalted butter

📌 Salt and pepper to taste


Instructions:


  1. Cook hash browns according to packaging.

  2. Cook sausage according to packaging.

  3. Scramble eggs by whisking in a bowl. Add milk.

  4. Spray pan. Line pan or cover bottom of the pan with hash browns.

  5. Pour egg and milk mixture into pan over hash browns.

  6. Pour cheese over eggs and milk in pan. Mix.

  7. Form balls of cream cheese and plop them in egg mixture.

  8. Add choice of sausage or meat (if desired)

  9. Melt butter. Mix with cornflakes.

  10. Cover egg mixture in pan with buttered corn flakes topping.

  11. Sprinkle with cheddar and mozzarella cheese on top.

  12. Bake at 425 degrees for 20 minutes or until eggs are solidified to desired “doneness.”


Feel free to sprinkle chives or parsley on top for garnish!



My Foodie Thoughts


This should a hearty and hefty casserole for the family to put all other dishes to shame. I typically break this out once a year on Christmas day for my family to enjoy for brunch after we've opened gifts and spent some time together...and we're all good and hungry.
